Request from CFA
For items that have safety stock unit set to Days, the conversion to cases in their Suggested Orders is based on the item's average daily forecasted usage which includes catering orders and any manual forecast adjustments made by the restaurant. Can we update the Days to cases safety stock conversion to be based on the raw forecast only (not including adjustments from catering orders or manual adjustments made by restaurant)? We're experiencing compounding and unreasonably high safety stock levels for restaurants, especially when high levels of catering orders are placed.
Example of current process:
- Item's safety stock: 2 Days
- Order created date/time: Dec 10, 6am
- Cover Until date/time: Dec 14, 6am
- Forecast range: 3 days (Dec 10, 11, 13)
- Raw inside sales forecasted usage: 21 cases
- Restaurant adjusted forecasted usage: 26 cases
- Usage from catering orders: 7 cases
- Total net forecasted usage: 33 cases
- Avg daily net forecasted usage: 11 cases (net forecasted usage / forecast range)
- Days to cases conversion: 22 cases (avg daily net forecasted usage * safety stock Days)

Business Problem
Catering sales are already sold product in the forecast. The restaurant has accounted for catering sales already and any catering seen in the forecast is not a projection of what catering we can expect to see in the future but a list of catering orders that have already been placed in the past. The rest of the forecast includes what we expect to sell in the coming days.
Because of this, the safety stock value is inflated based on “forecasted” catering sales.
